Asi Maman
Así was born and raised on a kibbutz in Northern Israel with both European and Moroccan roots, where he grew up farming an extensive array of produce. After the army, Maman moved to NYC, where he worked various jobs until deciding to enroll at The Institute of Culinary Education and complete his studies in Culinary Arts. He first worked in the kitchen at Gramercy Tavern, and then was a part of the opening team at Marea, which was awarded two Michelin stars. From there, Mamana joined the opening team of Osteria Morini as a sous chef, and then chef de cuisine. He then worked as a private chef for several years before joining the team at M. Wells.

Heather Pelletier
Heather was born and raised in Staten Island, NYC. After graduating with a BS in Food Studies from NYU, she went on to study Baking and Pastry Arts at the French Culinary Institute. She started her professional career in pastry at Momofuku Milk Bar and then Osteria Morini, where she decided that the savory side of things was more her style. Pelletier learned the ins and outs of cooking on the job and eventually became chef di cuisine at Osteria Morini, before moving on to French fine dining at Vaucluse. She then spent a year as chef di cuisine at Boqueria, before becoming the executive chef of Chumley’s, a historic speakeasy. Through the pandemic, she’s worked as a chef at M. Wells.
